One Family’s Long Chapter in Temecula Wine Country

Some Temecula wineries tell the story of the valley’s growth.

Baily Winery & Vineyard is part of that story.

The Baily family’s connection to Temecula began in 1981, when Phil and Carol Baily and their two young sons left the Los Angeles area and moved to the Temecula Valley. At the time, the region’s wine industry was still in its formative years. The family planted its first grapes in 1982, expanded the vineyard the following year and began pursuing the viticulture and enology education that would shape the winery that followed. By 1986, the Bailys had opened their first small winery.

It was a modest beginning: one wine, a Cabernet Sauvignon made using carbonic maceration, a technique more commonly associated with Beaujolais. But the family continued to develop both its vineyards and its winemaking, eventually becoming one of Temecula’s established family-owned producers. (Baily Winery & Vineyard)

That history remains unusually tangible.

Baily is not simply a winery that has been operating for decades. Three generations of the family are now involved in carrying the winemaking tradition forward, with Phil Baily, his son Patrick and grandson Alex contributing to the continuing family operation. (Baily Winery & Vineyard)

The wines have also developed a clear identity.

Baily specializes in the classic Bordeaux varieties—Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Sauvignon Blanc and Semillon—while also producing Chardonnay, Riesling, Sangiovese and Southern Rhône-style blends. The winery emphasizes an Old World-inspired approach, with longer barrel aging and an emphasis on varietal character, structure and finesse rather than sheer fruit intensity. That philosophy makes the winery’s library particularly interesting.

Baily maintains older vintages of Cabernet Sauvignon, Cabernet Franc and Meritage, allowing visitors to encounter wines with years of additional bottle age. For anyone interested in how wine changes with time, that is a very different experience from tasting a collection of young current releases.

Instead of simply asking which wine is preferred, a vertical tasting invites another question:

What does time do to the wine?

The answer unfolds gradually from glass to glass.

Baily’s current visitor experience has also undergone an important change.

In 2025, the winery closed Carol’s Restaurant and sold the former visitor-center property, moving tasting and sales operations to its production facility at 36150 Pauba Road. The winery says the move is intended to enhance the visitor experience while allowing major investment in new plantings and replanting of aging vineyard blocks. (Baily Winery & Vineyard)

That makes the current Baily experience particularly connected to the winemaking operation itself.

Visitors are no longer simply arriving at a separate hospitality venue. The tasting room is located at the production facility, where the wine is actually made. The current tasting room is open daily, and the winery describes the setting as offering vineyard views along with the opportunity to see where its wines are produced. (Baily Winery & Vineyard)

The transition also represents something larger.

After decades of growth, the Baily family is investing in the next chapter rather than simply preserving the winery exactly as it was.

There is something appropriate about that.

A family winery survives by changing while retaining the things that matter. The property may change. A restaurant may close. A tasting room may move. Vineyard blocks may be replanted.

But the fundamental thread remains the same: grapes grown in Temecula, wine made by the family and a commitment to carrying the tradition forward.

For visitors, the current Baily experience therefore has a certain intimacy.

The story is not hidden behind a large resort complex or an elaborate hospitality program. It is visible in the wines, the vineyards, the production facility and the generations of the family involved in the work.
